Award-winning pizzaiola Audrey Kelley is satisfying Boulder locals with her own distinctively unique pizza, built with premium ingredients and a naturally leavened, three-day fermented dough. By developing a genuinely unique dough style all her own, Audrey has elevated her pies and cultivated a fiercely loyal clientele that can’t find that particular crust anywhere else!
Audrey’s cozy neighborhood location has just enough room for a kitchen, order counter, and a few small tables. Outside, there is additional seating on the covered patio. In nice weather, a glass garage door between the kitchen and patio rolls up to welcome the afternoon breeze.
Audrey tightly focuses her menu on her top twelve signature pies, premade salads, and artisan sodas to spotlight only truly unique items.
Curate Unique Flavors
In developing specialty pies, Audrey looks to unique flavor combinations favored by family and friends. Lasting winners include Audrey’s vegetarian “Green Mountain Pizza” (a local landmark), combining her mother’s favorite flavors including fresh spinach, fresh ricotta, fresh garlic, and olives. “The Spicy Pig” is topped with her husband’s favorite roasted jalapenos and spicy house-made Calabrian chili sausage.

Audrey’s secret is her crust. Over time, she has systematically elevated her dough’s tang and texture by tweaking its leavening, rise-time, and hydration. She even grinds her own flour for greater flavor complexity. Not only has it attracted a loyal following, her signature dough also helps win international pizza competitions.
