Mary’s Sugo Siciliano
Cousin Rita Busalacchi loves this fresh-tasting marinara-style recipe of mother-in-law Mary Busalacchi. Rita says the key to this sauce is great tomatoes!
Makes 4 to 6 servings.
Ingredients:
- ½ cup extra-virgin olive oil
- 2 large onions, chopped
- 4 large cloves of garlic, halved
- ¼ cup chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1 bay leaf
- 4 cups Tomato Magic®
- 1 pound hot, cooked pasta
- Salt and pepper
Instructions:
- Heat oil in large saucepan over medium heat.
- Add onions; cook until tender.
- Add garlic, parsley, basil, and bay leaf; cook 1 – 2 minutes.
- Stir in Tomato Magic®; season with salt and pepper.
- Reduce heat to low, cover and simmer 10 minutes.
- Serve over pasta. (Also great over fried eggs for Sunday brunch!)
