Mary’s Sugo Siciliano


Cousin Rita Busalacchi loves this fresh-tasting marinara-style recipe of mother-in-law Mary Busalacchi. Rita says the key to this sauce is great tomatoes!

Makes 4 to 6 servings.

Ingredients:

  • ½ cup extra-virgin olive oil
  • 2 large onions, chopped
  • 4 large cloves of garlic, halved
  • ¼ cup chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 1 bay leaf
  • 4 cups Tomato Magic®
  • 1 pound hot, cooked pasta
  • Salt and pepper

Instructions:

  1. Heat oil in large saucepan over medium heat.
  2. Add onions; cook until tender.
  3. Add garlic, parsley, basil, and bay leaf; cook 1 – 2 minutes.
  4. Stir in Tomato Magic®; season with salt and pepper.
  5. Reduce heat to low, cover and simmer 10 minutes.
  6. Serve over pasta. (Also great over fried eggs for Sunday brunch!)
