Salsa di Cipolle e Capperi
Cousin Lorene Freggiaro created this light, delicious sauce to treat our guests at Pizza Expo ’95. Made with our Alta Cucina® Plum Tomatoes, it is delicious served over capellini or atop crostini as an appetizer.
Makes about 3 cups.
Ingredients:
- 2 tablespoons extra-virgin olive oil
- ½ cup chopped green onions
- 3 tablespoons of capers, drained
- 2-¼ cups coarsely chopped and drained Alta Cucina® Plum Tomatos
Instructions:
- Lightly sauté onions and capers in olive oil, just enough to blend flavors.
- Gently fold in chopped, drained Alta Cucina® Plum Tomatoes.
- Serve over capellini as a light main dish, or atop crostini as an appetizer.
