Salsa di Cipolle e Capperi

Cousin Lorene Freggiaro created this light, delicious sauce to treat our guests at Pizza Expo ’95. Made with our Alta Cucina® Plum Tomatoes, it is delicious served over capellini or atop crostini as an appetizer.

Makes about 3 cups.


  • 2 tablespoons extra-virgin olive oil
  • ½ cup chopped green onions
  • 3 tablespoons of capers, drained
  • 2-¼ cups coarsely chopped and drained Alta Cucina® Plum Tomatos


  1. Lightly sauté onions and capers in olive oil, just enough to blend flavors.
  2. Gently fold in chopped, drained Alta Cucina® Plum Tomatoes.
  3. Serve over capellini as a light main dish, or atop crostini as an appetizer.
